It's as if the oven whispers a merry spell to each cookie, turning them into enchanting treats that prance right off the baking tray and into your heart (or at least your stomach!). So, gather your apron, and let's embark on this sweet, reindeer-shaped adventure, courtesy of the wonders of the Cuisinart Gourmet Pro!

Ingredients

  • 175g plain flour
  • ½ tsp. bicarbonate of soda
  • 1 tbsp. ground ginger
  • ½ tsp. cinnamon
  • Pinch of sea salt
  • 160g soft brown sugar
  • 100g butter, cubed
  • 1 medium egg
  • 100g icing sugar, sieved
  • Water
  • Red lollies, smarties or M&M minis for the nose

Preparation

  1. Place the flour, baking powder, ginger, cinnamon, salt and sugar into the large bowl of your food processor. Pulse briefly to combine the dry ingredients.
  2. Add the butter and egg and pulse briefly, before processing continually, until the mixture starts to form a ball.
  3. Tip the dough onto a lightly floured work surface and bring together to form a ball. Wrap in cling film and chill in the fridge for 15 minutes.
  4. Using the lightly floured work surface, roll out the dough to a thickness of 5mm. Using a round cookie cutter, cut  and place on the baking tray, lined with greaseproof paper. From leftover dough into a ball and re-roll and repeat, cutting out until all the dough has been used.
  5. Set the Gourmet Pro oven to convection bake for 160 ̊C.
  6. Bake for 8 minutes. Cool on a wire rack. Repeat baking process for second batch of cookies.
  7. Make the icing by adding 1-2 tsp. water to the icing sugar, until it reaches desired consistency. Spoon into a piping bag, fitted with a small nozzle. Pipe decorations onto the biscuits and add a red nose to complete your reindeer cookies!.
