Ingredients
- 2 medium zucchinis
- ½ small onion
- 1 clove garlic
- 2 eggs
- ½ cup plain flour
- ¼ cup grated parmesan
- 2 tbsp chopped herbs (parsley, chives or dill)
- ½ tsp salt
- ½ tsp black pepper
- Olive oil for frying
- 100 g smoked salmon
- 3 tbsp sour cream or crème fraîche
- 1 spring onion, finely sliced
- Lemon wedges
Preparation
- Using the grating disc in the Cuisinart Flex Prep food processor, grate the zucchini and onion. Transfer to a bowl and squeeze out excess liquid using a clean tea towel or paper towel. This helps the fritters crisp up.
- To make the batter attach the blade and add to the food processor bowl eggs, flour, parmesan, garlic, herbs and salt & pepper. Pulse 3–4 times until just combined.
- Add the grated zucchini mixture and pulse briefly to combine.
- To cook the fritters, heat a thin layer of olive oil in a frying pan over medium heat.
- Spoon about 2 tablespoons of mixture per fritter into the pan and flatten slightly.
- Cook 3–4 minutes per side until golden and cooked through.
- Assemble by stacking 2–3 fritters, then top with a dollop of sour cream, folds of smoked salmon and sliced spring onions.
