Cool, tangy, and just a little bit fancy—this is the frozen yoghurt glow-up you didn’t know you needed.

Ingredients

  • 2 cups chopped rhubarb
  • ⅓ cup sugar
  • 2 tablespoons water
  • 2½ cups full-fat Greek yoghurt
  • ¾ cup sugar
  • 1 teaspoon vanilla extract
  • ¾ cup granola (store-bought or homemade)

Preparation

  1. In a small saucepan, simmer rhubarb, sugar, and water for 8–10 minutes until soft and jammy. Let it cool down completely
  2. In a bowl, mix Greek yoghurt, sugar, and vanilla until smooth.
  3. Pour the yoghurt mixture into your Custom Scoops Ice Cream Maker and churn for about 20–25 minutes until thick and creamy.
  4. Assemble the Pops:
  5. Spoon churned frozen yoghurt into popsicle moulds.
  6. Add little dollops of rhubarb compote and a sprinkle of granola as you layer.
  7. Swirl gently with a skewer if you like a marbled effect.
  8. Insert sticks.
  9. Freeze for at least 4 hours or until firm.
