Ingredients
- 3kg half leg ham, bone in
- 250ml Pale Ale beer
- ½ cup orange marmalade
- ¾ cup brown sugar
- Juice & peel of one orange
- 1 knob ginger, thinly sliced
- 24 cloves
- 1 cinnamon quill
Preparation
- Preheat oven to bake on 180°C. Line a large roasting pan with baking paper and place the ham onto the paper. Run a small knife between the rind and the fat underneath to loosen, then, using your hands, carefully peel off the rind, leaving an even layer of fat on the ham. Discard the rind. Score the rind in a diamond pattern with a knife and insert cloves into the joins.
- Place the remaining ingredients into a saucepan. Stir over a low heat for about 10 minutes or until the marmalade and sugar have dissolved and the mixture is evenly combined.
- Using a pastry brush, paint a third of the glaze onto the ham and bake for 5 minutes. Repeat this process (including basting the ham) twice more for a total 15 minute cooking time. Serve warm or cold.
