Ingredients
- Zest of 1 lemon
- ½ cup sugar
- 2 eggs
- 130g greek yoghurt
- 1/3 cup olive oil
- 2 tbsp lemon juice
- 1 cup flour
- ¼ tsp salt
- ½ tsp baking soda
- 1 tsp baking powder
- 1 tbsp poppy seeds
- 1 cup mascarpone
- ½ cup thickened cream
- ¼ cup icing sugar
- 1 tsp vanilla extract
Preparation
- Preheat the Cuisinart Air Crisp Pro Combi Oven to 180C.
- In a large mixing bowl, combine lemon zest and sugar. Use a whisk or your fingers to rub the zest into the sugar until fragrant and slightly softened.
- Add eggs, yoghurt, olive oil and lemon juice to the bowl and whisk until smooth and well combined.
- Add flour, salt, baking soda, baking powder and poppy seeds, and fold the dry ingredients into the wet ingredients until just combined. Be careful not to overmix.
- Pour the batter into a prepared loaf pan and spread it evenly.
- Once the 'ready' light pops up on your Air Crisp Pro Combi Oven, bake the loaf for 25-30 min.
- After 30 min, rotate the pan 180 degrees and reduce the temperature to 160C for a further 10-20 min or until a toothpick inserted into the centre comes out clean. Let the loaf cool in the pan for 10 min before transferring to a wire rack to cool completely.
- Meanwhile, use an electric mixer to combine mascarpone, thickened cream, icing sugar and vanilla extract until smooth and fluffy. Adjust sweetness to taste.
- Once the loaf has cooled, slice and serve with a generous dollop of mascarpone whip on top. For an extra touch, drizzle with a little more olive oil if desired.
