Hot Cross Bunnies

Makes 12 buns

Ingredients

  • 40g salted butter
  • 2 cups plain flour
  • 7g sachets dried yeast
  • 140g castor sugar
  • 1 tsp mixed spice
  • 1 tsp all spice
  • 1 cup sultanas or currants
  • 160ml milk
  • 1 eggs
  • 1/2 cup water
  • 2 tbsp caster sugar
  • Dash of cinnamon
  • 40g milk chocolate
  • 20g white chocolate/ruby chocolate
  • Pink gel colouring

Preparation

  1. Melt butter over the stove or in the microwave till melted. Add milk and stir. Then add yeast and set aside.
  2. Combine all dry ingredients in stand mixer bowl.
  3. When the yeast mixture appears to have doubled in size, add this together with the dry mixture and combine on slow speed. Use a dough hook.
  4. Add egg into the mixture when you see that the contents are half way combined.
  5. Once the dough starts to lift off from the surfaces of the bowl you can stop the mixing process. Remove the bowl from the stand mixer and cover with a table cloth and place bowl in a warm area (23degrees).
  6. Depending on the temp of your environment the wait time will vary. Once your dough has doubled, place dough on lightly floured counter top and knead for 5 mins. If you dough if too dry or too wet, add flour/milk little at a time till you have a rollable consistency.
  7. Once your dough is smooth, portion it out to 12 pieces. Roll the small portion into a ball then place on your preened baking tray that come with the Cuisinart Steam Oven. Place a cloth over to proof till it doubles in size again. Now this is the fun bit, if you want to make them all cute with ears you will need to roll some dot sized balls and then shape them as a longer bun, then you can place them on the top corners of the bun to make bunny ears. You can see in the photo we have used a round shape pan, but you can use whichever you have at home and add the ears to the buns.
  8. Put water in the steam function and preheat you oven to 180degrees. Good thing about Cuisinarts Steam Oven is that it does come with a bread bake setting. You can use that to preheat the oven.
  9. Once the buns have doubled, place in oven and bake for 17mins or till golden brown. The steam function makes the buns soft as cloud.
  10. To make the glaze combine water, cinnamon and sugar into a small saucepan over low heat. Stir until sugar dissolves. Boil for 5 minutes. Brush warm glaze over warm buns.
  11. Once buns completely cool that’s when you can decorate the bunny faces with chocolate on the bun. (The bunny faces have replaced the traditional crosses on these buns)
  12. Melt the chocolate over a double boiler or in the microwave on low heat, make sure to consistently stir so the chocolate doesnt burn. Once melted place in a pipping bag.
  13. Cut the tip off the pipping bag and draw eyes and whiskers as desired.
  14. Repeat the same process for the white chocolate, to colour the white chocolate add little bit of gel colouring in until you reach desired colour. If you happen to get your hands on ruby chocolate then you do not need to add gel colouring. Then place in a pipping bag and draw a little dot to create the nose for the bunny.
