Makes 12 appetisers

These Crispy Wonton Chicken Salad Cups are the ultimate easy appetiser. Air-fried in the Cuisinart Air Crisp Pro, the wonton wrappers turn perfectly golden and crunchy in minutes, ready to be filled with a fresh, flavour-packed chicken salad.

Quick to prep, fast to cook and big on crunch, this is a crowd-pleasing bite that’s ideal for entertaining, grazing boards or light lunches with zero fuss.

Ingredients

  • 12 square wonton wrappers
  • Olive oil cooking spray
  • 6 hole muffin tin (metal, to fit inside Cuisinart TOA-75XA)
  • 1 cup cooked chicken breast, finely diced
  • ¼ cup mayonnaise (or Greek yoghurt for a lighter option)
  • 1 tsp soy sauce
  • 1 tsp rice vinegar or lemon juice
  • 1 small garlic clove, minced (optional)
  • Salt and pepper to taste
  • 1 cup finely shredded lettuce
  • 1 small carrot, julienned into fine strips
  • 1–2 spring onions, finely sliced
  • ¼ cup toasted almonds or cashews, roughly chopped
  • Optional: fresh coriander or mint leaves, finely chopped

Preparation

  1. To make the Wonton Cups, lightly grease the muffin tin cups or spray with oil. Gently press each wonton wrapper into a muffin cup, folding the edges to create an open flower shape like in the image. Lightly brush or spray the wontons with oil to ensure even crisping.
  2. Place the muffin tin into the Cuisinart Air Crisp Pro and select Air Fry setting at 180C for 5 minutes Cook until the edges are golden and crisp. Watch closely during the last minute to prevent over-browning, and add time if not browned enough after 5 minutes. Remove and cool completely in the tin to hold their shape.
  3. Repeat above process with an additional 6 wontons to ensure you have 12 crispy wonton cups
  4. To prepare the chicken salad, combine in a mixing bowl - diced chicken, mayonnaise, soy sauce, vinegar or lemon juice, and garlic if using. Season with salt and pepper. Mix well and refrigerate until ready to assemble.
  5. Once the wonton cups are completely cool, spoon a small amount of the chicken mixture into each cup. Top with a pinch of shredded lettuce, a few carrot strips, sliced spring onion and a spinkle of the chopped nuts.
  6. Once the wonton cups are completely cool, spoon a small amount of the chicken mixture into each cup (no more than 1 tablespoon to keep it neat like the image).
