Ingredients
- 1 baguette, sliced into 2cm slices
- 1 brie cheese (approx. 200g) at room temperature
- 1/2 cup cranberry sauce (store-bought or homemade, see below for recipe)
- Fresh rosemary sprigs
- 1 tablespoon olive oil
- Salt and freshly ground black pepper
Preparation
- Homemade Cranberry Sauce: In a saucepan, combine 1 cup fresh or frozen cranberries, 1/4 cup orange juice, and 1/4 cup sugar. Simmer over medium heat, stirring occasionally, until the cranberries burst and the sauce thickens (about 10 minutes). Let it cool. (You can make this ahead of time and store it in the fridge).
- Arrange the baguette slices in a single layer on the cooking basket of the Cuisinart Air Crisp Pro.
- Brush each slice lightly with olive oil to help them crisp up while baking.
- Using the Cuisinart Air Crisp Pro combi oven, toast the bread using the Toast function, selecting shade 4 / 3-4slices (default setting).
- Once the bread is toasted, remove it from the oven and let it cool slightly.
- Add a thin slice of brie cheese on each toast. Top each toast with a teaspoon of cranberry sauce. Place a small sprig of fresh rosemary on top of each toast. You can either leave the rosemary sprig whole or chop it finely if you prefer smaller bits of rosemary.
- Sprinkle a tiny pinch of salt and freshly cracked black pepper on top, to balance the sweetness of the cranberry sauce.
- Serve immediately while the bread is warm and crispy.
