Ingredients
- 2 slices thick-cut bread (brioche, sourdough or white sandwich bread)
- 1 large egg
- 60ml milk (¼ cup)
- ½ tsp vanilla extract
- ½ tsp ground cinnamon
- 1 tsp sugar (optional)
- Small pinch of salt
- Light spray of oil or melted butter
Preparation
- To make the custard, in a shallow bowl whisk together egg, milk, vanilla, - cinnamon, sugar and salt.
- Dip each slice of bread into the mixture for about 10–15 seconds per side.
- Be careful not to oversoak - air fryers cook best when the bread isn’t dripping wet.
- Lightly spray the air fryer basket with oil, or brush with melted butter.
- Place both slices flat in the drawer (don’t overlap). Air fry at 180°C for 8–10 minutes, flipping halfway (around the 4–5 minute mark) until your French toast is golden on the outside and set in the centre. If using very thick brioche, you may need an extra 1–2 minutes.
- Rest for 1 minute (it firms slightly as it cools). Serve with ricotta and honey soaked figs.
