Ingredients
- 4x chicken thighs (or drumsticks)
- 250ml buttermilk
- 1 clove garlic, minced
- 1 tablespoon lemon juice
- ½ teaspoon sea salt flakes
- 1 cup plain flour
- 65g cornflour
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- ½ teaspoon sea salt
- ½ teaspoon white pepper
- Olive oil Spray
- 2 tablespoons extra virgin olive oil
- 2 Tablespoon lemon juice
- Salt and pepper to taste
- ½ teaspoon Dijon mustard
- 2x zucchinis, thinly sliced into ribbons
- Bunch of rocket
- Store-bought pickled cucumbers and gherkins, halved
- Lemon wedges
Preparation
- In a large bowl, whisk together buttermilk, garlic, lemon juice, and salt. Add the chicken thighs, ensuring they are fully coated. Cover and refrigerate for 4–12 hours (overnight for best flavour).
- In a separate bowl, mix together flour, cornflour, paprika, onion powder, garlic powder, salt, and white pepper.
- Remove chicken from the buttermilk, letting excess drip off. Press each piece into the coating mixture, ensuring an even layer.
- Arrange the coated chicken on a wire rack and spray with olive oil. Air fry at 200°C for 12 minutes or until golden and crisp. Ensure the chicken reaches a safe internal temperature.
