Ingredients

  • 1 ripe banana
  • 1 egg
  • 3–4 tbsp plain flour
  • Optional: pinch of cinnamon or drop of vanilla
  • Baking paper (cut into squares, roughly the size of your pancakes)

Preparation

  1. In a medium bowl, mash the banana in a bowl until smooth. Add the egg and mix until fully combined.
  2. Stir in the flour, starting with 3 tbsp and adding more if needed, until you get a thick, spoonable batter. Add cinnamon or vanilla if using, for extra flavour.
  3. Spoon a few tablespoons of batter onto a square of baking paper, shaping it into a pancake.
  4. Repeat to make 3–4 pancakes, layering with baking paper between each one.
  5. Place the stack in your air fryer basket.
  6. Air fry at 180°C for 10–12 minutes, until the pancakes are puffed and cooked through.
  7. Carefully peel off the baking paper layers and stack the pancakes on a plate.
  8. Top with your favourites to serve - banana slices, maple syrup, yoghurt, nut butter… whatever you love.
