150g sugar
250ml water
8 passionfruits
3 bananas, peeled
1 lime, juice

To prepare the sorbet, place the sugar and water into a saucepan, bring to a simmer until the sugar has dissolved. Remove from the heat and chill in the refrigerator for 20 minutes.

Cut the passion fruit in half and scoop out the pulp. Using a fine sieve and a ladle, push the passionfruit through to release all of the juice. Keep a tablespoon of the seeds then discard the rest.

In a blender place the peeled bananas, lime and passionfruit juice then blend until smooth.

Transfer to a mixing bowl, add in the chilled sugar syrup and reserved passionfruit seeds then stir until combined.

Place the sorbet mixture into the sorbet churner then churn until frozen. Once frozen, remove and store in a container in the freezer until needed.
